Industrially Relevant Research, Technology Development:

The focus of my present research is in the areas of post harvest biology and technology, functional foods and nutraceuticals. Various aspects dealing with improvement in fruit and vegetable shelf life and quality, and efficacy of functional food ingredients are being investigated. Technologies and products have been developed for enhancing the shelf life and quality of fruits and vegetables based on phospholipase D inhibition. As well, novel technologies for the isolation of active nutraceutical fractions and the use of nutraceuticals to enhance the functional food value of processed fruits and vegetables are being developed (disclosure stage). The phospholipase D inhibition technology for fruit and vegetable preservation is in the process of commercialization. R&D activities relevant to the Industry sector include; 1) Optimization of an enhanced freshness formulation for application to various fruits, vegetables and flowers; 2) Developing methods for nutraceutical carriers that would enhance the functional food quality, and efficacy of processed fruits and vegetables (ex. Stabilizing the levels of lycopene in tomato juice, sauce etc. for health beneficial effects such as preventing cardiovascular diseases and prostate cancer); and 3) Developing novel technologies to enhance the cancer-preventive ingredients in red wine, grape powder and grape juice.
